New Zealand Sweet (which are like firm, but soft and chewy marshmallow)

The New Zealand Lolly Cake traditionally uses Fruit Puffs or Eskimos, which are like firm, but soft and chewy marshmallows. Chopped lollies are added to the base mixture, which consists of crushed plain malt biscuits combined with melted butter and sweetened condensed milk. The mixture is usually pressed into a log shape and rolled in coconut, and then refrigerated until set and sliced. Other ingredients can be added or substituted.
Ingredients - Sugar, Glucose Syrup (CORN), Water, Gelatine (beef), Natural Flavours, Natural Colours (100, 162), Spirulina Extract. May be present DAIRY and SOY

Lolly Cake Recipe
Ingredients:
- 120g Butter
- 1 Packet (250g) of Griffins Malt Biscuits – crushed
- 1/2 a tin (200g) of Sweetened Condensed Milk
- 200g of Fruit Puffs / Emos
- Desiccated Coconut
Instructions:
Warm butter and condensed milk in microwave. Cut up fruit puff lollies into bite sized chunks. Mix butter, condensed milk, crushed Malt biscuits and lollies together. Form into a log shape. Roll in coconut. Chill in fridge for 4 hours. When set, cut into slices and serve. Devour, or you can share if you have to.
